I have been on a break up with carbs this year, and have one go-to saving grace when I need something delicious to look forward to. ย Beau and I have tried a few different cauliflower crust recipes in the past but they never ended up like actual crust, always more like a soggy casserole (obviously we still ate it). When my dad started on his diet he discovered this winning cauliflower crust recipe.

For one crust you will need:

  • Oven preheated to 425
  • 1 cup cauliflower
  • 1/2 egg
  • 1/2 cup low fatย mozerella
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp basil

One head of cauliflower usually makes about 4 cups of grated cauliflower.

I grate the cauliflower with my food processor because it is fast and doesn’t make me realize how weak my arms are ๐Ÿ™‚

Once the cauliflower is grated, you push it around in a pan on the stove for about 9 minutes on medium heat. This gets some of the moisture out of the cauliflower, which is way better than squeezing out the water in cheese cloth which always grossed me out.

Once the cauliflower has cooled, mix in the cheese, egg and spices. Line a pan with parchment paper and make a thin crust that should be about 10 inches or so wide.

Throw it in the oven for 25 minutes, flip the crust and cook for another 10 minutes. Add your toppings and put back in the oven for another 10 minutes or so and BOOM. I make mine with low fat cheese and turkey pepperoni and veggies and it definitely still feels like a cheat!
